Apple Cider Donuts

No bake, dehydrated donuts made with fresh apple juice and loaded with nutrients.

Ingredients

  • 2 1/2 cups rolled oats
  • 1 cup Brazil nuts or walnuts
  • 1/2 cup almond flour
  • 2/3 cup apple juice 1-2 apples juiced, or processed and strained
  • 1/3 cup coconut nectar
  • 1/4 cup coconut sugar
  • 1 tbsp cinnamon
  • 1 tsp vanilla extract or bean paste
  • 1 tsp sea salt

Instructions

  • Juice 1–2 apples and set aside. If you don’t have a juicer, process the apples and strain the pulp.
  • Process the rolled oats into oat flour and transfer to a mixing bowl.
  • Process the Brazil nuts (or walnuts) into a fine flour and add to the bowl with the oat flour.
  • Add the almond flour, cinnamon, coconut sugar, vanilla, and sea salt, then mix well.
  • Stir in the apple juice and coconut nectar, mixing until fully combined into a dough-like consistency
  • Press the mixture into a donut pan, ensuring an even shape.
  • Dehydrate at 115°F for 1 hour, then carefully remove the donuts from the pan and transfer them to a dehydrator sheet.
  • Continue dehydrating for another 2–4 hours, or until firm on the outside while remaining soft inside.

Notes

For quicker dehydration, line the donut pan with plastic wrap before pressing in the dough. This makes it easy to lift and transfer the shaped donuts directly onto the dehydrator sheet.
